Neweuser, the 125B seems to work fine for everyone, as for the 80, well leroy is there to test it out for us!

The only thing I have ever heard is that running an ESC at much lower current than it is rated for reduces the fine amounts of control, so it may cog at more. However, I am running a 10XL which is easy on the current and haven't seen any control or cogging issues with the Quark 125B, which is way more than the motor will need. Maybe that was an issue for older models, I dunno. Electronically speaking, it's better for longevity of the individual electronic components to run them much lower than their max ratings. Everything stays cooler and lasts longer.
