how to keep the esc cool

stock emaxx spur what is the stock spur is it 64t or 68t and 22t pinyon

ive got a ubec and a fan

i have also taken the heat shrink off the esc

Add an extra cap - try to reduce gearing - change the motor - buy a better esc

Or you could put it in the fridge and that will for sure keep it cool.
No what Arct1k said - there are many things you can do to keep an ESC cool just need to know what other variables there are.

run a higher turn motor and that ESC can handle a 5s pack...high voltage + low KV = cooler system but Feigaos will run on the hotside it the way they are designed. Good thing they are cheap and make sure your ESC timing is set at 0. You can try a Medusa motor they are better than a Feigao but not as good as a Neu.

5s with 10XL should be a decent system

Motor timing is normally for motor temp rather than esc temp...

I'm guess given choice of brushless components that this is a budget setup - the 7XL is probably the main problem - It's an Amp intensive "relatively" ineffecient motor... result - Hot esc and hot motor

wil a spur with moor or less teeth cool it down al so could some one tell me what this things mean in the manual AdvanceT (Timing): low, middle and high, default is middle and Freq=(PWM frequency)

I would go less (18) and try low timing to see if that helps with motor temp

a smaller spur is gearing up and that will increase resistance against the motor/ESC causing heat
