I'm surprised your LHS doesn't care. After all, it's a business to make money and you'd think they would get interested if it means more of your money in their pocket. Oh well, their loss I guess.

Final roll out is the combo of all gearing (diffs, spur/pinion, tranny, etc) and also the tire size. (Bigger tires make the car go faster for the same axle rpm.)

The 27mph option would probably run cooler, but kinda boring IMO. The 34 mph option doesn't sound too bad though. I would get a couple pinions so that you have some options. Just watch temps until you get a feel for what they are for different driving conditions and ambient temps.
