You can run as many cells as you want as long as the ESC you are using can handle it and whatever motor you pick doesn't exceed around 35,000 rpm. If you wanted to use 100 cells (120v), you'd have to run a motor with a kv of around 290 to maintain that 35000 rpm "golden rule".

Using a motor that will exceed that rpm will be OK as long as it isn't running at that speed for long. For speed runs, the motor would be running at its peak and wouldn't be advised. In racing, it should be ok since you won't be hitting top speed all that much. But be warned, the motor will get quite warm. You could move to a higher-end motor like a Neu or LMT to help with that though.
