If you're doing speed runs, I'm assuming that means that you're running higher voltage and taller gearing. With a higher top RPM available, that means the throttle trigger will be more "sensitive". In order to make it less "sensitive" (not the proper term, but you probably understand), you can increase punch control.
Assuming you're geared higher, it's going to take more effort to get the motor moving from a dead stop. If that's the case, you can increase start power to give more reliable starts.
You could play around with the timing a bit, as increasing timing will cause higher RPMs, but make sure you watch the temps closely if you do increase the timing.
