I think this project would be ideal for a dual brushless setup. A couple of largish size outrunners (so you won't need to gear down a whole lot) running on dual 6s lipos in parallel with dual ESCs. This would let you use relatively cheap ESCs for 5s or 6s operation and lower current. Even at 6s and say 60A each, that's over 3.5HP total. Then, something like the Nomadio radio in "tank mode" (where turning the wheel adjusts the throttle speed of each side) as a sort of differential.
