Speed wise you will be limited by the largest pinion you can find and the smallest spur gear that will still allow decent gear mesh and some motor to tranny clearance. Looks like a 25/36 mod1 combo would be the minimum size. Which would give plenty of gear for almost all of the proposed setups.

Sike, what do you think the max rpm a 2826 axi can be spun up to? 15k - 20k rpm?
