I can only see two options:

If the FOC is installed and 2nd gear is locked: Disable braking in the ESC and use ch3 (not channel mixing) for the brake servo. But that wouldn't be intuitive IMO. Plus, if you forget which control to use for braking during running, activating the normal throttle-channel brake would instead slam it into reverse. Not good.

Or, retain the machanical reverse mechanism. Disable reverse and brakes in the ESC. The downside to this is that the reverse system is pretty weak, and you'll need two servos; one for the brakes and one to activate reverse.
