The nominal voltage and fully charged voltage are two separate numbers. In this case, the nominal voltage is 3.20v, and the fully charged voltage is 3.65v. Normally LiFePO4 settles down to ~3.45-3.50v after a charge, so 8s LiFePO4 will typically be ~27.6-28.0v when plugged into the ESC. 6s Lipo fully charged is 25.2v, so I think 8s LiFePO4 will be too much for the MMM.
With A123s, balancing isn't so much of an issue. With other less expensive LiFePO4 I'm guessing the quality isn't as good, so balancing might be a bit more necessary.
