It's the hand work that takes some time. They run all the boards thru loading and solder of all the components in just a short time (at least we did at our SMT shop). Then they have to hand solder all the connections & big caps maybe some other things, coat the boards & allow that to cure, then mechanical assembly, fans, case, sticker, packaging, etc. Somewhere in there is inspection & electrical testing, possibly even burn-in time. The place (CC) is not that big & it's not like they have a 100 people in there doing all this stuff so it's no surpise that they might only come out at the rate of couple hundred a week or so. All the while they are also building all the other product that they offer. It's not like the MMM is the only thing they work on.
