I think I remember a castle guy saying (and correct me if I'm wrong) that what the PC is actually doing is putting a cap on the maximum rate of change of the throttle position signal inside the esc.

So adjusting the throttle curve, you can still go zero to wide open as quick as you can pull the trigger (or as the esc allows it to happen on 0%PC anyway). But with high punch control, no matter what the throttle curve is set at, there is still a maximum rate of change of throttle position.
