"Be careful" just means that if the neutral throttle deadband is too small, the car may take-off when you don't expect it to. Signal resolution aside, most transmitters use a potentiometer when you turn the wheel and they have been known the drift in value. So, if you are too narrow, this resistance drift may no longer be in neutral, but a hair above/below it. Also, the throttle may not be at exactly neutral when you release the trigger and let it re-center.

I use a deadband just large enough that I can touch the trigger without the motor trying to move. If you have to press f/r more than 1/16", the deadband is too high. If the deadband seems different in forwards than reverse, you probably should recalibrate the transmitter and ESC.
