Yeah, that's about right. It's just showing that any extreme is not good. The idea is to match the setup right for proper operation. In case you didn't catch it, the gearing slider plays affects the temp the most.

As to the motor size question: I personally would go for the 80mm. The increased surface area will have better cooling ability and will be less sensitive to less than ideal gearing.
