The phrase "champagne taste on a beer budget" immediately came to mind. 80mph truggy? Sure, but be prepared to spend more money (and then even more money in alimony/child support). 80mph is not cheap, and you certainly will not be able to get a truggy and the right components to be able to attain 80mph and be reliable from simply the sale of your existing setup (resale value in this hobby is not the best).
The HV110 is used primarily for HV use. But, it is running outside the spec and CC may not or will not warranty it when used this way. Aircraft ESCs are not designed the same way as car ESCs (helis are probably closer though).
If you could live with ~40mph top speed, Arct1k's advise is probably the best bet.
