Those pistol guns go get hot (I have a 100w/250w selectable power version), but there is not much thermal mass in the tip and so cools down fast. Not to mention it is a PITA to keep the tip clean at that temperature! Those top few irons in the pic above have much more thermal mass, so you get a more consistent heat without the heat/cool fluctuations.
