You mean one of the 3 main motor wires unplugged? Yeah that would kill any esc if you keep hitting the throttle after it happens. Sensored or not. When the truck starts jerking back and forth wildly that should be a sign that something is wrong....
Did this happen after a crash? I'm thinking your motor leads are not long enough and so they got pulled out from the stress. Or, possibly the connectors are worn out.
