6s on a 2700kv motor puts the rpm at just under 60k rpm actually. I would't go much higher than that though as motor efficiency falls quickly. Just gear up a bit. And don't forget; that max rpm will only be realized for a relatively short amount of time when you actually reach the target speed.
No matter what, speeds like this is going to be expensive. It requires a lot of power and the chances of burning something out is much higher. If you still want really high speed runs, expect to have a failure or two.
