Well, you could use the throttle trigger from an old transmitter and modify it into a lever, then mount the un-cased guts of the transmitter somewhere on the bike and run longer wires to the throttle trigger through the frame or alongside (or inside) the brake cable.
Edit: Or, if you really want a twist-throttle like on a motorcycle, you can still use the throttle trigger from a transmitter, but mount it in such a way that twisting the throttle grip pulls the trigger.
