If you're going to use an R/C based esc, an easier way is to use a servo tester. The servo tester has a potentiometer on it that you turn to adjust the position of a "servo", but it can be used to drive an esc the same way. A lever can be attached to it, or with some inginuity it could be mated to a twist grip. don't know the cost of one, but if you have an old Tx around that might be a cheaper way to go.
