I just search Ebay for "low ESR capacitor" and always find what I need. It is important that they are low ESR and that you use short leads when connecting to keep overall resistance low. Look for caps rated to 105C temps, most low ESR caps will be.
Also a good rule of thumb is to get caps rated for an extra 50-75% of the voltage you plan to run. 35V caps are pretty well accepted for up to 6S. Running caps at their max rated voltage will greatly reduce lifespan of the cap.
Finally, running two 1000uF caps in parallel is better for dissipating heat than one single 2000uF cap, so if you have room look at making a bank of smaller caps instead of one big one.
