This behavior is the nature of sensorless brushless. If the motor stops, the ESC must re-locate the position of the rotor, hence the delay. You may try adding some forward trim once armed(so at neutral on your trigger, the car moves slightly forward) - this should in theory prevent the motor from coming to a stop, and therefore also eliminate the associated delay. :)
