My parents came over for dinner, and we had some black market sausage!! I'm from rural MN and we know an old guy that butchers 200 hogs once a year. He only makes sausage out of the hogs. No roasts, no loins, no bacon, ALL of that good meat goes into sausage. After that, some simple smoking and only salt and pepper for seasoning.
It is the best sausage ever! The old guy and his wife live all year off the sausage profits. Luckily my dad is one of the trustworthy few that get this "black market" sausage!
Of course my old man will show up a few times a year with some moonshine too, so it gets interesting

Reminds me of Brasil. We used to butcher our own pigs, chicken and sometimes a goat. We also had raw milk, organic vegetables, fruits and a couple of other good things delivered to the house. If anyone had a chance to eat the best nature provides, they would hate super market stuff.
