The fact it happened when you changed to big joes (larger diameter tire, higher overall top speed) tells me that you are geared too high.
Use a smaller pinion or switch back to truggy tires.
The high temps on the 2650kv motor also point to too high of gearing.
You should gear for a top speed of about 45mph or you will have temp problems with continuos running. Anything above that is considered "speed runs" and requires cooling down between runs.
