Well, yes, but the LVC shuts off when the cells reach a certain level. You'd have to know what your battery voltage is if you did it manually. By the time you notice a substantial loss in power, they could be discharged too far. The discharge curve of Lithium is pretty sharp near the end.

Also, a LVC doesn't cut power to the batteries (at least none I've seen do), it interrupts the throttle channel and sends a "stop" signal to the ESC when the batts get low. Most, if not all, ESCs still draw some power when plugged in even though the ESC is off. So it is ALWAYS recommneded to unplug the batteries.
