I have not had any experience with Lipo batts yet so I am only speaking from things I've read etc. Mike would be the one to ask to get you info on Lipo details.
It doesn't seem that any Lipo setups are going to be cheap. To run Lipo's in your emaxx, you're going to want a high discharge battery so Thunder power pro lite's and FMA kokams seem to be the top dogs so far. FMA gets the nod from me because of the super high discharge and the safety features available with the new technology. You will need 6400 mAh to guarantee the 20+ minutes runtime. Two 6400mAh Kokams are $285 each plus $110 for the charger. Unfortunately you will only be able to charge one pack at a time, unless you spend another $110 for a second charger (although they do boast it charges the batts 90% in 20 minutes). Thunder power also has a setup that would work for you. The TP6000-2S3P look like they run around $150 each plus around $120 for a decent charger.
If you want a longer runtime, you should run a higher voltage system like 18-20+ cells. The higher voltage systems are more efficient so they get longer run times.
