I just got another LiPo charger which makes a total of 3 for me. I have been charging with with my other two chargers on the Pro Peak power supply. Would it be ok to hook up this 3rd charger to it as well and use all 3 at the same time?

Here are the specs on the power supply.

It depends on how you use the other chargers. That power supply can handle 240watts. If you assum 85% charger efficiency, that means that all of the chargers combined can put out 204watts. If you're charging three 4s packs (16.8v each), that means you can charge at a combined 12.14amps, or 4.05amps per charger.

So what if I had two 5s 4000mah packs and one 3s 2100mah pack, would that be ok?

Assuming you want to charge at 1C:

The 5s 4Ah pack requires 84 watts each (4.2v/cell * 5s * 4A).
The 3s 2.1Ah pack requires 26.46 watts (4.2v/cell * 3s * 2.1A).

Add them together and you get 194.46 watts total. Figuring an 85% charger efficiency, that brings it up to 228.77 watts. If your charger is good for 240 watts, it'll work, but it will be working hard.
