Here ya go MaxxBear, This little tool (Thanks to BrianG) can help you figure out your questions.

http://scriptasylum.com/rc_speed/_top_speed.html

use the top speed calc to figure out the gearing, don't over gear or you'll run into problems.

I retired from RC, now life is all about guns and long range shooting.

Yes, but the Hyperions seem to be the #1 bang-for-buck at the moment, the only issue you may have is they will do serious damage to lesser drivetrains. You can't go wrong with Hyperion, they really deliver!

From what I understand using one 2S and one 3S is fine as long as the individual cells are identical, and have the same use, if not new.

For balance on the maxx 2 packs are preferable. You can run a pair of 2s packs for 4s, or a 2s and a 3s for 5s total. Best to keep the same packs together, as all of the cells will age at the same rate if always run together. I would go with 5s, 4s setups tend to have high current draws, and 5s will allow for lower gearing (for the same speed if using the same motor) and you will get longer runtime.
