You could add big wheel or axle extensions to get the proportions correct, but its still gonna be hard to control at speed (you do plan on going more than 20mph right?), and be prone to tipping over in turns or just snapping in half the first time you jump it.
Your money, but if I wanted something 1/5 scale, I'd buy a 1/5 scale and convert it, not stretch a 1/8 scale...
