I think the knob can be used to vary one of the channels, and mix the switch to turn that channel from full to off. I have chosen a motor that will spin the blades at about the right speed at full throttle.

The blades will be mounted to the hub with shoulder bolts, that way they can fold back it they strike something solid. The spinning force will keep them out otherwise.
