Sensorless technology is getting better and better, and right now it is quite smooth. In my vehicles, I use a MGM Compro 12012 and a Mtroniks Genesis Truck controller. The MGM cogs at the lowest throttle input I can put in, and the Mtroniks does too, just not quite as bad. But, I don't drive at 1mph, so it isn't a problem for me.

The current sensorless setups are more powerful than what is offered in terms of sensored systems. This is apparent with the high-power systems that are being used in monster trucks, and there is no (known by me) sensored system that can match the power of these sensorless setups.
