i thought that the lower the number, the higher the kv rating
and the lower the torque

therefore on 5s:
8=35428rmp
9=31501 rmp
10=28356 rmp

so an 8xl motor on 5s sounds good, any one have experience with that motor setup?

The higher the number, the higher the Kv. yes... but torque is not determined by the Kv. (the torque constant is; ex. oz-in./amp), all the XL motors have the same Peak torque. Then, however high of voltage you use, determines the max rpm, and thus the torque band (torque goes down linearly in the rpm range).
