I was thinking along the same lines, but use small potatoes (or maybe cherry tomatoes?) instead. They're biodegradeable.

The paintballs are biodegradeable as well. They're typically made with food grade products. I watched an episode of "How It's Made" showing that they are gelatin based and water soluble. Here's some more info:
