Assuming you gear them both for the same top speed (and thus use the same throttle input), you should gain 25% runtime. So if you get 15mins on 4s 5000, you'd get almost 19mins on 5s 5000mah.

But if you keep the same gearing, you might end up with the same or slightly less runtime (depending on if you changed your throttle control or not with the higher top speed).

havent heard many good things with those extreme lipos... the flying guys are dissapointed in them.

I thought that was the 1st series and the V2's are one of the best packs on the market?

yes, i may be wrong, but the bad ones were great for 50 or less runs then pretty much useless...
