It *might* work, but it's a bit sketchy really. The motor KVs would really need to be pretty much identical as you probably know so that they don't work against each other, and some of the cheaper outrunners' KV ratings can vary by 100KV each way. The main problem is back-EMF pulses though; the MMM would see the two motors as just one motor, and if the EMF pulses are even slightly out of phase from the two motors, it could really confuse the ESC and cause all kinds of problems.
Technically it's possible, if you motors are *completely* identical (and I think the rotors/cans would need to be in the same position in relation to stators on both motors - someone correct me if I'm wrong)...but it might well cause a whole load of problems. You'll be better off with individual ESCs IMO, expensive as it is.
