I ran an ste with a neu 1509 on 2s lipo and it did just fine so I can imagine this setup with 3s will work great.
But i think that the motor will overheat easier on 3s because of the higher voltage.

Heat is caused by a few factors.

If the motor is spun too fast, ie, the voltage input is too high and the motor exceeds the mfgs recommended rpm the motor will get hot.

Too much load will also cause heat. Ie, gearing is too high or the motor is not big enough for the vehicle.

Seems like this motor is the correct size, and if you run it with lower gearing on 3s (to get the same speed as you would have it geared higher on 2s) it should run cooler.

As long as the motor is sized correctly and does not exceed the mfg specs on voltage, and your gearing is not too high it will be fine. Your ste is light and you are only gearing for 50mph. Mine was geared for 45 and did fine on 2s. The motor is used was a 6500kv, and I would have run 3s lipo if the kv was lower, in the 4000kv range.

Keep in mind that volts x amps = watts. Since you plan to gear both the 2s and 3s setup for the same speed the watts will be the same. So look at the equation and see that higher voltage will require less amps to make the same watts. Less amp draw means cooler equpemnt and less strain on the battery.
