I was more impressed by the specs on the Losi (160A cont/800A peak). What are the power ratings on the Monster? Are they still using "more than you can handle"?

According to Castle's "Special Projects" page, the MMM is rated for 120A continuous. Now, at first glance, the 160A Losi ESC might seem a better choice, but many ESCs are rated "optimistically". Many I've seen simply add up the current rating of the FETs, and at 25*C. Now, I don't know about you, but even properly cooled setups will NEVER run at 25*C unless in the dead of winter. And FET current rating goes down with temperature, sometimes quite a bit. I haven't spec'd out the MMM, but their HV110 (airplane ESC) is rated at ~200*F - much more realistic. I would imagine they rate all their products in the same realistic way. So, if the Losi ESC is rated 160A @ 25*C, it would be closer to 90-100A at normal running temperatures.
That aside, virtually no setup I have ever seen uses 160A continuous. If it did, even a 10Ah battery would only last 3.75 minutes. Most MT/truggies geared for track use (~35mph) tend to run in the 15-20A average current rating, with peaks up to 7X that (~150A). So as long as the ESC you are looking at can handle the continous and burst value, you're fine.
