Brake Setting when using mechanical brakes?
 
I'm running a Mamba Max in my Ve8. I'm planning on using the mechanical brakes.

I was wondering what to set the ESC Brakes to so that they don't come on at all?

Seems the lowest number I can enter for "brakes" is 10%. Will that be sufficient so the motor doesn't do any braking? If not, what setting should I use and set?

Set to Forward/Brake only
Set brakes to Custom, then 0%
Set drag brake to 0%

The actual brake servo movement will be done with mixing on your transmitter or with the use of a Y harness.

+1 for TeknoRC. If you decide to use the Y-Harness on the throttle channel, just make sure your linkages are adjusted so the brake does not engage when applying throttle.

If you do mixing on your transmitter rather than a Y-harness, you can further reduce the chance for brake by turning the brake EPA down to 0% for the brake side after you program the endpoints on your ESC.
