The controller being rated for 125 amps doesn't mean it can pull that many amps without getting hot,it means it can pull that many without going smoke....

That sounds like wishful thinking.I'd try the esc in the steering reciever port since you know that's working.If it works then it might be the reciever and if it doesn't then it's likely the esc.

12 gauge wire like the deans Mike carries will be fine.
