If you set up the suspension correctly, 6s will be fine for jumping, climbing, etc. The 12XL will run the coolest of all the other XL motors you mentioned and you can just gear up to make up for the lost speed from the lower KV motor.

I'm only going to be using the stock gearing on the LST.

Gears are cheap and easy. You will want to change gearing at some point anyway, so you can get the 12xl and 6s, and then if you find the top speed lacking, purchase a larger pinion.
