More kv just means more speed on the same voltage- torque depends more on gearing than anything with the motors we generally use, there are numerous threads on the subject and how to calculate it, but its awfully confusing- any large XL sized motor will be powerful enough, but 4 pole motors like neus and medusas will be better than feigaos.

Battery choice isnt that difficult, assuming you have room for them. Just look for something that can provide at least 100amps of current, or more like 120amps to give you some head room. You can do a bit of fun maths though- take the rated wattage of the motor, divide it by the voltage of the lipos you plan to run, and that will tell you how many amps you need roughly as a continuous rating; peak current draw is a bit more difficult to determine, but some motors list the peak wattage, so that makes it easier.

25-35c 5000mah lipos are a good base line to look for.

MMM and 2x 3s lipo will be plenty for 60mph, look on rclipos.com for your batts if you want top quality, or hobbycity.com & look at the Zippy lipos (blue bricks) for best bang for bucl lipos.
