I don't know where in Utah you are visiting, but right now in Sandy (Salt Lake City suburb), it is real light powder falling right now, and tomorrow is supposed to be more of that. If there is really light powder on the ground, nothing RC stays on top of it, everything just sinks.

If it doesn't snow anymore until you are here, it should crust over pretty well, which means almost anything will stay on top of the snow, well enough. I would recommend 4wd and big tires for flotation though. HPI Bajas with paddles also do pretty well in snow too.
