The simple way is to calculate the voltage and the motor Kv and add a saftety margin(motor will spin faster when not loaded). I use 38000 rpm as a "target" for motor/voltage selction. Hope this helps. :)

Understood,but....should I not run full throttle? Is there a point where I should let up? I have a GPS to record MPH,but is there a way to know when to back off?
