Ok, thanks for clearing that up, just one more thing. Does disconnecting the red wire from the esc stop power coming from the esc to the rx?

Precisely. The outside (usually black/brown) is a ground. The middle wire is the +ve voltage from the esc's built-in BEC output, and the outside wire is the signal. You always need ground for the signal to make sense, but once you have a separate bec you dont need the red one :)
