The point of running high voltage, in this case, is not for top speed, but for efficiency. High voltage geared for a medium
speed results in low current -------> high efficiency and little heat. Also this allows you to use a smaller (and cheaper) ESC.
It allows your batteries to give you more runtime.... the benefits are huge.

I say go for it. Maybe even go 6S. But Id actually say use something like a 1800-2000kv motor on 5S and gear down to get
around 35k RPM. Either that or 6S on 1500kv motor. What voltage can that 33A esc handle?
