The caps are there to provide stable operation in case there's a sudden spike in current and your batteries can't hold the voltage. Your esc can still run even if one or 2 caps popped as long as the current spike is within the capabilities of your batteries. The caps also act like a booster to the esc to provide the occasion current outburst that the esc needs. Of course it has to stay charged in order to do that. A capacitor is like a temporary battery that will provide that momentarily high current surge that the esc needs.

You have to open case carefully to check if they are swelled, thats easiest but not accurate.
