Spooling up is basically how quickly the motor reacts to the throttle signal- a 2 pole motor will hit maximum rpms very quickly, where as a 4 pole/ 6 pole etc will take a little longer to max out, even when you pull full throttle on the transmitter instantly. Kind of like car engines- smaller engine will accelerate quicker but have limited power/ top speed, but a larger engine will take longer, yet have much more power to make a higher top speed (through gearing).
