Your best bet would be to take an esc that you didnt mind voiding the warrenty on and smoothering everything apart from the heatsink in plasti-dip, leaving the rx lead and switch wires emerging from the black lump of goo once its dried. That should take care of the esc, then you just have to clean out/off the motor and oil the bearing to stop them rusting on the motor, and wrap some PTFE (plumbers tape) around the power connectors, and seal the batts with some white silicon sealant. Stick the rx in a sealed box or a balloon to waterproof that too.... heck, stick the whole lot in a watertight container, just leaving some small holes for the wires to exit, then seal around them with some silicon- that will save you having to mod the esc to start with. :)
