Ahhh I just re-read your post. You mean coat everything except basically the fan? The fan looks like a perfect spot for water to get in to me....
Actually, coat everything up to the heatsink. As long as there is a seal between the heatsink and the coating, it's waterproof and there is no thermal penalty. Although, I personally would want to heatsink the BEC. It's switching but it does produce some heat.
