Yes, there are more options, but pretty much anything equivalent you piece together will cost more. The Mamba Max aside; from opinions around here, the Quark or MGM are the high-end ESCs with the BK Warriors being middle of the road. The more expensive ones will generally have more programming options. For motors, the LMT 1920/1930/1940/1950 are the cream of the crop, followed by the Lehner Basics/XLs, followed by the BK Wanderers.
First figure out your budget. Then, figure out how many cells (and what kind) you want to use. BL motors seem to be most efficient in the 35-40k rpm range, so you use that to figure out what kv motor you need. The size and weight of your vehicle will determine how big (how much torque) your motor will need to be. Given your various drivetrain reduction (tranny, diffs, spur/pinion, etc), you can figure out your approximate speed.
