If you are putting the pack on one side, I'd personally go with a single 5s pack. You won't need a Y adaptor which means less connections and wiring. Really, the only advantage to seperate packs is you have more mounting options...
And with two, you can distribute the weight better. IMO. I would go one 2s and one 3s
